At Peña de Baena, we believe in collaborations born from respect for the product, for history, and for the pursuit of excellence. For this reason, we are especially proud to share the beginning of a new partnership with the restaurant Noor, the gastronomic project led by Paco Morales and Paola Gualandi, awarded three Michelin stars.

A few days ago, we had the opportunity to welcome them to our olive mill. This meeting allowed us to share our vision of extra virgin olive oil and lay the foundations for a project that looks to the future while remaining firmly rooted in its origin.

Through this collaboration, we have become the official supplier of extra virgin olive oil to Noor, a step that fills us with both pride and responsibility. Our EVOO now forms part of the culinary proposal of one of the most influential restaurants on today’s gastronomic scene, where every ingredient has meaning, a story, and a purpose.

A Bottle Created for Noor

This joint effort has given rise to a new bottle designed exclusively for Noor. It is a very special project, developed together by the restaurant team and our olive mill, created to reflect Noor’s identity, history, and culinary philosophy.

This bottle contains a unique oil, crafted from a selection of our finest olives, a blend of Picual and Picuda varieties, with notes that evoke the richness of our land. An EVOO conceived to reflect the excellence, precision, and sensitivity that define Noor’s cuisine.

For us, it is much more than a bottle: it is a way of expressing how our oil adapts to and integrates into a unique gastronomic project, respecting its essence while bringing the flavor of our land.

Commitment to Education: Qurtuba Academy

This alliance also extends into the educational sphere. At Peña de Baena, we are especially proud to be the official supplier of extra virgin olive oil to Qurtuba Academy, the culinary school founded by Paco Morales.

Being part of an educational project of this level strengthens our commitment to sharing the culture of EVOO, training new generations of chefs, and highlighting the role of extra virgin olive oil as a fundamental ingredient in haute cuisine.

We are truly excited about this new chapter alongside Noor and Qurtuba Academy, and it inspires us to continue working every day to bring Baena’s extra virgin olive oil to places where origin, knowledge, and excellence are truly valued.
