- 10 g of rocket.
- 10 g of endive.
- 20 g mango.
- 20 g of orange.
- 20 g avocado.
- 10 g of fresh onion.
- 4 units of cherry tomatoes.
- 1 teaspoon Dijon mustard.
- 1 teaspoon of Flores honey.
- Peña de Baena Extra Virgin Olive Oil.
- Assorted sprouts.
- Salt.
Duck Ham with Avocado and Mango Salad
Duck ham, as a gourmet product, is made from the breast of the duck, unlike other hams. In this recipe it is accompanied by mango, whose perfumed and sweet flesh highlights the delicate flavour of the ham, and avocado which, together with the nutty nuances of the Peña de Baena Extra Virgin Olive Oil, provides a light hazelnut flavour, a perfect combination for a summer salad.
- Make a vinaigrette with honey, mustard, Peña de Baena Extra Virgin Olive Oil, and salt.
- Chop the fruit together with the cherry tomatoes and mix with the vinaigrette.
- Arrange the rocket, endive, and fresh onion on the bottom of the plate.
- Place the fruit and tomatoes dressed with the vinaigrette on top.
- Top with the slices of duck ham.
- Finish with a drizzle of Peña de Baena Extra Virgin Olive Oil.
