Orange Salad
- Wash an orange carefully and grate its peel. Reserve this zest for later.
- Peel the oranges, removing as much of the white pith as possible. Cut them into pieces and place them in a deep dish to preserve all the juice.
- Sprinkle with sugar to reduce acidity.
- Prepare the salted cod by placing it in large pieces in a frying pan. Cook over medium heat until slightly translucent. Then shred it with your fingers into long strips.
- Mix the shredded cod with the orange pieces, generously drizzle with our Extra Virgin Olive Oil Corona de Baena, and mix well.
- To serve, garnish with the grated orange peel. You'll achieve a nutritious and flavorful first course that will impress year-round.
