Ingredients
- 1 garlic clove.
- 2 Tbsp fava bean flour.
- 2 slices of bread.
- 1 cup of extra virgin olive oil Peña de Baena.
- 1 pinch of salt.
- 1 tablespoon vinegar.
- 1 liter of fresh water.
Fava bean garlic
- Remove the crust from the bread and moisten it with water.
- Peel the garlic.
- Put the garlic, breadcrumbs, and fava bean flour in the blender. If you can't find this type of flour, you can soak some dried beans, peel them, and grind them together with the bread crumb and the rest of the ingredients. In this case, it may be necessary to pass the cream through the chinois.
- Blend for a few minutes until you make a dense paste. If we need to dissolve a little, add water.
- Add extra virgin olive oil Peña de Baena and salt. Continue whisking until you get a thin paste of the consistency of mayonnaise.
- Put the pasta in a soup tureen and add the cold water. Dress with a few drops of vinegar and adjust the salt if necessary.
- Peel the grapes and remove the seeds. (We can replace them with currants that we will have had in warm water for a few minutes or chopped apple.)
- Serve very cold, accompanied by the grapes cut in half and flavored with a mint leaf.
