- 1 Kg of Aubergines
- 1/2 L Milk
- 200 Gr Flour
- Salt
- Extra Virgin Olive Oil from Molino de Ízcar
Crispy aubergines
Typical dish from Cordoba that is usually eaten as an appetizer.
Aubergines, when fryed, tend to absorb oil and mask their flavor, however, with Extra Virgin Olive Oil Molino de Ízcar this does not happen, since it is a mild-flavored oil, ideal for frying, giving the dish an extra crunchy texture.
- Peel the aubergines and cut them into slices of about 1/2 cm.
- Place them in cold milk to which salt has been added beforehand.
- After 30 minutes, flour them and fry in Extra Virgin Olive Oil Molino de Ízcar until golden brown.
- Serve immediately.
