Ingredients
- Lettuce mix.
- 200 grams of partridge (previously cooked in a soft pickle).
- Common vinaigrette: 1/3 white wine vinegar + 2/3 EVOO PEÑA DE BAENA.
- Cane honey vinaigrette: 1/3 Pedro Ximenez vinegar, 1/3 cane honey, and 1/3 EVOO PEÑA DE BAENA.
- Sal Maldon.
Warm Partridge Salad
Pickled partridge salad is a recipe worth trying if you want to change the traditional style. The pickled stew is an excellent ingredient to dress a delicious salad. In addition, the aromas of a variety of salads such as lettuce, lamb's lettuce are ideal to combine with pickled partridge meat.
Extra virgin olive oil from Peña de Baena is an ideal complement to make the different vinaigrettes to dress the salad. It's a different and very simple recipe.
- Heat the pickled partridge a little and debone.
- Mix with lettuce.
- Garnish with the two types of vinaigrettes.
- Finally, season with a few flakes of Maldon salt.
